Lemon drizzle cake recipe



Lemon drizzle cakes is one of my favourites! I have been making it for years so I thought it was about time I shared it on here with you.
This recipe is for a cake but for a change I decided to put it in to loaf cases instead. 


150g butter
150g self raising flour
150g caster sugar
2 eggs
2 tablespoons of boiling water
75g of caster sugar for topping
1 lemon

1.First cream together the butter and sugar until light and fluffy
2.Add beaten egg a little a time and beat well
3. Fold in the flour
4. Add boiling water and grated lemon rind
5. Place in cake tin
6. Bake 180oc or gas mark 4 for 30 minutes
7. `Beat 75g of caster sugar with the lemon juice until it creates a frosted topping
8. sprinkle over the top of the cake whilst its still warm

  10. This sounds so good. I like to cook but have never been great at baking I'm afraid, despite the fact that my mum used to be amazing at it and my sister is great at making cakes too x
